When I was a child, I thought that old people were good at baking because they came from a generation that valued being good at baking. Now, as I have gotten older, I understand that being "good at baking" has less to do with generation, and way more to do with trial and error. The more time you have had on this earth, the more times you mutter "oh shit, I forgot to add lemon" after it's too late. You have time to get it drilled into you that every baked good needs a pinch of salt. You realize acid is essential to sweets and humidity actually does matter sometimes. After enough people take a bite of your pie and pretend it's the best pie they have ever had (at best, that pie is mid), you have learned the dos and don'ts. Your blueberry pie is ACTUALLY the best pie they have ever tasted. It has the perfect filling, the perfect crust, and you never, ever forget the lemon.
